Originally from Saint-Étienne, Julien Burlat began his training at the age of 15 with Pierre Gagnaire, before continuing at the Hôtel de Crillon, with Alain Ducasse, and alongside Bernard Pacaud at L’Ambroisie, where he developed an uncompromising respect for ingredients.
After settling in Antwerp with his wife Sophie, he founded Restaurant Dôme, which earned a Michelin star, followed by Dôme sur Mer and Dômestic, the latter becoming a local artisanal institution. In 2019, he sold Dôme while continuing to expand Dômestic.
A close collaborator of Arnaud Zannier, he joined Zannier Hotels to design the gastronomic offerings of its international properties. Today, he is leading the culinary revival of Île de Bendor, envisioning a dynamic ecosystem that brings together restaurants, bars, and chef residencies.
