Elsa Leblanc grew up in the south of France before pursuing her studies and beginning her career in Paris, then settling in Marseille in 2020. Trained in liquid gastronomy, she refined her approach behind the bar at Combat Belleville alongside Margot Lecarpentier, where she developed strong expertise in spirits and cocktail creation. In 2022, she founded Zéma, a brand of kombucha and draft cocktails. In April 2025, she opened Dérive, a seaside bar-restaurant in Marseille, with two partners from the craft brewing and bar worlds. Her work is defined by a product- and producer-focused approach, close collaboration with chefs, and a strong command of fermentation techniques combined with contemporary bar technologies.
