Léna Jacquot-Demaux is a sommelier and creator of non-alcoholic beverages, passionate about the world of gastronomy and wine. Initially drawn to the kitchen, she discovered sommellerie and the art of tasting during her final year of training in Paris, which naturally led her to pursue this path.
She began her professional career at Au Crocodile under the guidance of Sarah Benahmed, where she learned the standards and codes of Michelin-starred establishments. She then worked alongside Nadia Sammut at L’Auberge La Fenière and Thomas Lorival at Le Clos des Sens, developing her expertise in crafting non-alcoholic beverages designed to harmonize with cuisine, the seasons, and local terroir.
Back in Paris, she now works at the Parisian bistro Parcelles alongside Sarah Michielsen, showcasing a thoughtful and distinctive wine list while contributing to shaping the world of beverages in 2026.
