Musa Dağdeviren is a renowned Turkish chef and the owner of several restaurants in Istanbul, including the famous Çiya Sofrası, which he opened in the late 1990s after beginning his career in traditional Turkish cuisine during his childhood. Born in Nizip, in the Gaziantep region, he learned regional recipes from master cooks and expanded his knowledge by traveling throughout Turkey. Passionate about Anatolian culinary heritage, he strives to document and preserve forgotten traditional dishes by featuring them on his menus and publishing specialized works. Together with his wife Zeynep, he founded the Çiya Foundation and a publishing house that produces an academic journal on food culture. His work was featured in Netflix’s Chef’s Table series, and his book The Turkish Cookbook, containing hundreds of Turkish recipes, has been published internationally.
